We are looking for a visionary chef to expand our food and beverage program at Race Brook Lodge, and oversee the development of culinary offerings to accompany an increased focus on wellness activities and environmental sustainability.

Job Description Summary: The Executive Chef is an important creative role and leadership position at Race Brook Lodge. The Executive Chef oversees all food preparation for restaurant service in The Stagecoach Tavern, breakfast for lodge guests, catering for retreat groups on the property, as well as weddings and other other banquets up to 250 people. The Chef is responsible for cost control and inventory management in all food-related areas of the business, as well as managing all staff involved in food preparation. The Chef will represent the culture and values of Race Brook Lodge with all guests, vendors, partners and other staff, as well as in the public eye and online presence.

Essential Functions & Responsibilities:

  • Create menus and execute food preparation for all food service at The Stagecoach Tavern and Race Brook  Lodge. 

  • Plan menus for restaurant a la carte service and group banquets and other catering services, as well as menus for holidays and other special events.

  • Oversee food preparation for all Race Brook Lodge banquets, including weddings, private dinners, seasonal banquets and other special culinary events.

  • Supervise, manage and train all food prep staff. 

  • Schedule kitchen staff and order ingredients and supplies according to budget targets.

  • Execute Monthly inventory of all ingredients and kitchen supplies

  • Understand accurate costs of all items served..

  • Work closely with front-of-house staff to ensure the best possible dining experience for customers.

  • Maintain highest standards of cleanliness  and meet all applicable health codes

  • Meet with clients to plan menus for private groups and banquets, in collaboration with other staff.

  • Cultivate relationships with distributors, farms and other local purveyors for access to the best ingredients at good prices.

  • Work with the General Manager and finance team to create annual and monthly budgets, and track sales performance to-budget.

Race Brook Lodge is a rural retreat destination at the foot of the Taconic Range in the Berkshire Hills of western Massachusetts. We have 35 guest rooms, a 60-seat restaurant, several dynamic event spaces and an organic farm on the property. We host visitors to the Berkshires, as well as group workshops, retreats, weddings, live music and dance events, yoga retreats, corporate gatherings and more. The Stagecoach Tavern restaurant is a candlelit 18th century tavern with multiple fireplaces and 2 lounges. Events range in size from 10 to 200 people or more... and we may serve over 100 people in the restaurant simultaneously. Large events happen in our 200-year-old post and beam barn. In the summer, we produce a lot of our own ingredients from our gardens on-site. Guests enjoy a relaxed, rustic and bucolic atmosphere. They can find great hiking trails right from their rooms with direct access to waterfalls and the Appalachian Trail. Or they can relax in one of our many hammocks, or get their hands dirty in the garden. Our long-term vision is to build the property into a flagship for sustainability, healthy-living and wholistic healing and rejuvenation.
