Seared New Bedford scallops with caramelized leek cream, snow pea shoots, lemon and tarragon

Hudson Valley duck breast with butternut maple puree and roasted sunchoke, kale and farro hash

Farmer Ground polenta, shaved brussels sprouts, roasted shitake mushroom chips and a poached farm egg
